Chefs Jonathan Benno and Richard Capizzi Share Recipes Featuring Crown Maple SyrupSubmitted by Lydia on November 3, 2011 - 9:10pm
We’ve only been selling our certfiied organic pure maple syrup for a few months, but we’re already bowled over by the reaction we are getting everywhere we go. It’s very gratifying to be so well received, especially by some of the best chefs in the country, who have provided us – and you! – with maple syrup recipes using Crown Maple.
The latest chefs to share their secrets with us are Chef Jonathan Benno, formerly the chef de cuisine at Per Se and now executive chef at Lincoln Ristorante, the new modern Italian restaurant at New York City’s Lincoln Center, and Pastry Chef Richard Capizzi, also from Lincoln, who turns out the most authentic and refined Italian desserts using modern methods and the finest ingredients.
Chef Benno attended the Culinary Institute of America and has worked in some of the world’s finest kitchens, including Aqua and The French Laundry in California, Daniel in France, and New York’s Les Célébrités in the Essex House. His recipe featuring Crown Maple Syrup is Tortelli Di Zucca, tender pasta with a wonderful squash filling topped with a sauce infused with Crown Maple dark amber maple syrup.
Chef Capizzi, a Pastry Chef of the Year winner, has worked with some of the world’s most renowned chefs, including Thomas Keller, Jean Louis Palladin, and Pascal Brunstein. While at Per Se, Capizzi was honored by Dessert Professional magazine as one of the top 10 best pastry chefs in 2009. Try his Pan Pepato, a delectable tart made with 3 kinds of nuts and a Crown Maple gelato.
