Apple Pancakes with Crown Maple Syrup
1.5 cups all purpose flour
1 cup milk (whole or 2%)
2 large eggs
2 tsp baking powder
3 tbsp sugar
1/4 tsp salt
3 tbsp melted unsalted butter
1 cup finely chopped Granny Smith apple
Sift (or wisk) all of the dry ingredients together into a large bowl. Beat the eggs into the milk and butter, add to the dry ingredients and mix lightly. Allow batter to rest a few minutes before making the pancakes. This is the basic pancake recipe and is great plain, with blueberries or with the apples.
Optional: You can separate the eggs and beat the egg whites lightly and fold in to the batter last. This will make slightly fluffier pancakes.
Serve with butter and Crown Maple syrup. I like to mix the butter with the syrup and heat it just until the butter melts.
