Green Eggs and Ham Overnight Oatmeal

Dr. Seuss with a Crown Maple twist, this sweet and savory overnight oats combination is sure to please the whole crowd! Now it may not be as quick as a mason jar topped with freshness to kick off the morning but, some mornings are slowing down and enjoying time together, a delicious brunch and a little conversation. You can also as a weeknight entrée if your not feeling a savory dish in the morning.




1/2 cup oats
1/3 cup cottage cheese
1/2 cup milk
2 Tbl fresh herbs (such as chives and basil)
1 egg
1oz Black Forest Ham
2 Tbl Parmesan Cheese
1-2 Tbl Crown Maple Amber Syrup


For the overnight oats, the night before combine ½ cup oats, 1/3 cup cottage cheese, ½ cup milk, 2 tablespoons fresh herbs (such as chives and basil), garlic powder, salt and pepper and put in a mason jar to be stored overnight.
In the morning, on medium heat cook 1 egg and 1oz black forest ham using olive oil and a drizzle of Crown Maple Amber Syrup for the ham. Once the egg is done cooking, add the mason jar of overnight oats, 2 tablespoons shredded parmesan cheese, 1 tablespoon chopped onion and ¼ cup chopped raw spinach to the pan, stirring and heating until the mixture is warm. Transfer into a bowl and enjoy with your loved ones for brunch!
