Lime Scampi Dipping Sauce

The sauce has a bright and tart complexity that is perfectly balanced by the sweetness of our Bourbon Barrel Aged Male Syrup. We recommend serving it with our Maple Bourbon Fried Shrimp








2 Tbl Butter
1 Tbl Shallot, minced
2 Garlic Cloves, minced
1 cup Chicken Stock
2 Tbl Fresh Lime Juice
2 Tbl Bourbon Barrel Aged Maple Syrup
Zest of One Lime
1/2 tsp Salt
1/4 tsp Coarse Black Pepper
1 Tbl Cornstarch
1/4 cup + 2 Tbl Marsala Wine
Warm Water, to adjust consistency


Step One

In a small pot over medium- low heat, melt the butter and sauté the shallot until soft and translucent. Add garlic and cook until fragrant

Step Two

Add the chicken stock, lime juice, bourbon maple syrup, lime zest, salt and pepper and bring to a boil. Aside, make a slurry with the marsala wine and cornstarch and stir until smooth

Step Three

Gradually add the slurry to the boiling mixture, whisking constantly, and bring it back to a boil. Boil 2-3 minutes until thickened and remove from heat. This sauce can be served warm or cold. Adjust consistency with warm water as needed
