Maple Au Gratin Potatoes

Maple gently accents the inherent sweetness of potatoes in this rich and cheesy gratin

For the Gratin:
2 1/2 lbs Red or Yellow Potatoes, peeled and sliced
2 cups Heavy Cream
1 cup Half and Half
1 1/2 Tbl Dark Color and Strong Taste Maple Syrup
1 Fresh Thyme Sprig
1 Tbl Butter
1 Tbl Olive Oil
1 Onion, peeled and thinly sliced
3 Garlic Cloves, smashed and finely chopped
1 1/2 tsp Salt
1/2 tsp Black Pepper
3 oz Gruyere, shredded
For the Topping:
1/2 cup Finely Shredded Parmesan Cheese
Heaping 1/2 cup Plain Panko Bread Crumbs
1 1/2 tsp Crown Maple Sugar
3/4 tsp Salt
1/2 tsp Dried Thyme Leaves, crumbled
4 Tbl Butter, melted, room temperature


Step One

Preheat oven to 400 degrees. Lightly coat a 9 x 13" baking dish with non-stick spray and set aside

Step Two

Combine the heavy cream, half and half and maple syrup in a pot over very low heat. Bruise the thyme sprig with your fingers and add to the liquid. Keep warm

Step Three

In a saute pan, heat the butter and olive oil over medium heat. Add onions and saute until lightly golden and softned, 10-15 minutes

Step Four

Add the garlic, salt and pepper to the onions and cook until the garlic is fragrant, about 1 minute. Add the onion mixture to the hot cream and remove from heat. Allow to steep for 10-15 minutes

Step Five

Remove the thyme stems and sprig and discard. Toss the potato slices with the cream and onion mixture and sprinkle with gruyere cheese

Step Six

Spread potatoes into the prepared pan and bake at 400 degrees for 20 minutes. Combine all topping ingredients in a bowl and sprinkle over the top of the gratin. Reduce heat to 350 degrees and bake for another 20-25 minutes

Step Seven

Remove the gratin from the oven and allow to cool for 10 minutes before serving
