Maple Pumpkin Sugar Cookies

Maple Pumpkin Sugar Cookies

Lightly sweet with a hint of pumpkin and spice, these cookies add a touch of fall to any time of year

2 Dozen Cookies


1 Stick Butter
1/2 cup Crown Maple Sugar
1/2 cup Brown Sugar
1/4 cup Vegetable Oil
1 Egg
2 Tbl Very Dark with Strong Taste Syrup
1/2 cup Pumpkin
2 cups Flour
1/2 tsp Baking Soda
1/2 tsp Cream of Tartar
1/2 tsp Pumpkin Pie Spice
1/2 tsp Salt
1/2 cup Crown Maple Sugar, for rolling


Step One

In the bowl of a stand mixer fitted with the paddle attachment, cream together the butter, maple sugar and brown sugar until combined

Step Two

Add the vegetable oil, egg and maple syrup to the creamed mixture. Scrape bowl and mix well, then add the pumpkin

Step Three

Aside, sift together the flour, cream of tartar, salt and pumpkin pie spice. Add to the butter mixture and mix

Step Four

Dough will be sticky; Carefully transfer to either plastic or wax paper, wrap well and chill for at least 4 hours

Step Five

Preheat oven to 375 degrees and line two baking sheets with parchment paper. Place the 1/2 cup maple sugar on a plate

Step Six

Drop 2 tablespoons of cookie dough into the sugar and roll to coat. Place on the baking sheet and press down to flatten. Repeat process with the remaining dough

Step Seven

Bake 8-12 minutes or until cookies are set in the middle. Transfer to wire racks to cool
