This overnight oat recipe combines the tropical flavor of coconut & berries with a hint of maple sweetness. Sneak in some superfoods, like chia seeds, and you’ll add some brain fuel in too! A bit of the tropics, direct to you from the Hudson Valley!

TOTAL TIME: 24 HOURS
1⁄2 Cup (120 milliliters) rolled oats
! Cup (160 milliliters) coconut, almond, or milk
2 Tbsp shredded coconut
1 -2 Tbsp coconut butter
1 Tbsp chia seed
1⁄2 Tsp vanilla extract
1 Tbsp Crown Maple® Madagascar Infused organic maple syrup
Dash of sea salt Fresh berries of choice
Simply combine 1⁄2 cup (120 milliliters) rolled oats in a bowl with ! cup (160 milliliters) unsweetened coconut or almond milk, 2 tablespoons shredded coconut, 1-2 tablespoons coconut butter, 1 tablespoon chia seed, 1⁄2 teaspoon vanilla extract and 1 tablespoon Crown Maple® Madagascar Vanilla Infused organic maple syrup. Mix until the ingredients are combined. Add dash of sea salt and your choice of fresh berries. Addin berries the next day keeps them fresh!
Transfer ingredients to a mason jar and refrigerate overnight.
In the morning, serve oats (warm or cold) with a sprinkle of coconut flakes and a generous drizzle of Crown Maple® maple syrup. Enjoy!
