CROWN MAPLE® CHIPOTLE ROASTED POTATOES

An unusual combination that makes for a simple yet delicious side dish that is easy enough for any night of the week—or even breakfast. Use smoked paprika for a smoky kick.


PREP TIME: 10 MINUTES

COOK TIME: 20 TO 30 MINUTES

TOTAL TIME: 30 TO 40 MINUTES

SERVES: 4 to 6 PEOPLE


INGREDIENTS:

2½ pounds (1,134 grams) red potatoes 1 sweet onion, thinly sliced ¼ cup (59 milliliters) extra virgin olive oil 1 tablespoon lemon juice 2 tablespoons Crown Maple® Very Dark Color Strong Taste organic maple syrup ¾ teaspoon paprika ¼ + ⅛ teaspoon chipotle powder 2 teaspoon Kosher salt ½ teaspoon fresh ground black pepper


DIRECTIONS:

Heat oven to 425 degrees.

Scrub potatoes and trim any scars or eyes; cut into 1 inch cubes and place in a bowl.

Add onion to potatoes.

Add the remaining ingredients to the potatoes and onions and toss well; spread on baking sheet and bake 20-30, stirring twice until tender and golden.
